Eggs for breakfast and brunch is a normal everyday occurrence but basil scrambled eggs are really something different.

They are not just scrambled eggs but eggs cooked with basil pesto and creamy coconut milk. This combination brings out the best of the morning with eggs.

When you purchase your pesto make sure it’s exactly what you want. You see in today’s market place you can get pesto with pine nuts or without and your pesto may contain many other ingredients that you may or may not like. I suggest that you read the label to be sure you find the one you’re looking for or make your own.

I usually have toast or toast points with my scrambled eggs, but if you really want to give some zing to your breakfast just take the time to make some toasted tomato bruschetta. This will blend the flavor of the basil eggs well with the acidity of the tomato, it’s a wonderful combination.

The green eggs that we speak of in this recipe are made from white shell or brown shell eggs however, there is actually a green shelled egg.

What’s a green egg? A true green egg is the result of crossbreeding genes from blue shell eggs with genes from brown shell eggs. These eggs are green on the outside and blue on the inside.

Very few chicken breeds can produce this egg, which makes it very rare.

  1. Crack eggs into a clean bowl, season with salt and pepper and beat with fork or whisk until well blended.

  2. Bring a shallow pan to medium low heat and pour eggs into pan and add pesto.

  3. Cook over gentle heat while scrambling from time to time. Once eggs are almost cooked to your satisfaction remove from heat.

  4. Pour in coconut cream mix well and return to heat. then cook until eggs reach a creamy texture.

    Serve immediately.
