I suggest using avocado oil too fry bacon in this recipe because avocado oil as a very high smoke point so it will tolerate a very high heat and you don’t want you bacon to taste burnt.
You will need to purchase nice and crisp lettuce that can hold its shape, and that’s the reason that I use romaine lettuce. Romaine lettuce is not only perfect for lettuce cups but any part that’s not used can be used as a part of a tossed salad.
When you prep the turkey for turkey salad even though it’s diced it’s never a bad idea to finely chop a little of it. This depends on your preference of course. A little finely chopped meat in any high protein salad will help it hold together better.
Keto Turkey Salad Cups
Mix mayo, diced celery, onion, relish and mustard with turkey.
Add Salt and Pepper to taste.
Refrigerate at least 30 minutes.
Cook turkey bacon in oil until very crispy. Set aside and chop when cooled to room temperature.
Fill lettuce cups with turkey salad, top with green and red peppers, shredded cheddar and chopped turkey bacon.
