My Oven fried chicken recipe is one of my most favorite dishes to make nowadays, it does not require one to be a culinary wizard. The prep is very similar to regular fried chicken but the cooking method is different. This chicken can be done in parts cut from the whole chicken or as boneless breast, thighs, wings or drumsticks. To make my oven fried chicken you must first soak the chicken in a brine of lightly salted water. This brine help to keep the chicken moist and intensify the flavor of the seasonings.

I’m always happy not to have to handle the splatter and left over situations that is created when using oil to fry my chicken. I love this recipe so much that even when doing larger amounts of chicken I feel perfectly comfortable not pulling out my portable deep fryer which ultimately leads me left with about a gallon of leftover oil and a whole lot of cleanup.

I really don’t like having to come up with containers just to dispose of large amounts of used frying oil. When I was frying chicken in oil I didn’t have the opportunity to eat a whole lot of fried chicken. As a matter fact most people would rather buy their fried chicken from the carryout or one of the many fried chicken chain locations rather than fry it themselves. Quite frankly if you like fried chicken getting it from a carryout might make more sense, because as far as I’m concerned if you’re not frying a lot of chicken it becomes a whole lot of cleanup for such a small meal.

If you love good fried chicken I mean really good fried chicken then you will absolutely fall in love my oven fried chicken recipe.

And don’t forget one of the biggest advantages to making oven fried chicken is that there is an inherent health advantage in baking rather than frying.

Tips

When making a saltwater brine you can always add a little bit of your favorite seasonings to bring out the taste of your fried chicken even more.

Make sure that your oven is properly preheated. Placing coated chicken until cold oven might create moisture on the bottom of the chicken before the cooking process even starts.

When making your fried chicken be sure to shake off the excess of mayo mix and excess breading after dipping and coating.

If you wish you can replace the mayonnaise in this recipe with yogurt which is a pretty good substitute I’ve had it both ways and the recipe doesn’t lose a thing.

Be sure to flip your chicken over as directed in the recipe instructions. Now, it’s okay to flip your chicken over halfway through the cooking process I have it it’s worked pretty well for me doing it as the recipe calls for.

Storage

This chicken will keep very well if properly wrapped or place into an air tight container or storage bag and refrigerated immediately after meal serving period. Chicken should keep for 3 days.

Reheat in preheated 275° oven for 20-25 minutes, do not cover.

Can be frozen

Freeze immediately in freezer storage bags, then thaw under refrigeration when need. Reheat in preheated 275° oven for 20-25 minutes, do not cover.

  1. Clean chicken pieces under cold running water and soak for at least one hour in 2-3 quarts of water with 2 tbsps of salt added.  

  2. Remove from water and pat dry with paper towels and place in a bowl. 

    Preheat the oven to 350°F.

  3. In a stainless steel baking pan, ceramic, pyrex, or pan, line with aluminum foil spray non-stick cooking spray (generous amount) to coat bottom of pan. You can also line pan with parchment paper. No spray needed for parchment paper.

  4. Combine flour, bread crumb and half of the seasonings, blend well, set aside.

    Mix mayonnaise, Dijon mustard, egg, canola oil and the other half of seasoning together.  

     

  5. Place chicken pieces into mayonnaise mix and coat chicken. 

     

    Remove the chicken from mayo mixture, shaking off extra mayo mix and then place into the flour mix, coat evenly shake off excess, then place into the oil coated pan (be sure to leave space between pieces of chicken).

     

  6. Bake in 375 degree preheated oven for 35 minutes then turn over and let bake 15 -20 minutes.

    Chicken should be golden brown and crispy. Let rest at least 5 minutes. 

    Estimated bake time 55 min. to 1 hour. If chicken is not browning enough adjust your oven temp by 25 degrees higher.
