Slow Cooked Beef Short Ribs and Black-Eyed Peas cooked in a slow cooker is cooked until the ribs reach a fall off the bone tenderness. Cooking the ribs in a crock pot gives you the opportunity to not have to constantly watch them while they cook. So, maybe that time can be used to prepare other things to go along with the meal.

Beef short ribs are very challenging to cook due to the fact that the short ribs has two layers of meat. The top layer which gets sort of tender a layer of fat and then the bottom or main layer of meat which if cooked too fast will remain chewy. It doesn’t matter how long you cook this piece of beef, if you cook it too fast you’re not going to like it.

Low and slow is the only way. I don’t care if you are baking, braising, grilling, broiling, roasting or braising it, if the temp is too high it’s never going to be great.

Using a slow cooker (crock pot) allows you to put all of these worries aside.

The best way to save your leftover short ribs is to refrigerate them as soon as you can after the last person is served. Place them in air tight container or bags with excess air pushed out and they should hold well for at least 72 hours.

Yes, but it’s important to make sure that you bring them to room or below and package them the same as for the refrigerator. They should last in the freezer for 3-4 months

  1. Combine salt, black pepper, garlic and paprika and mix until well blended then season beef.

  2. In a sauté or frying pan over medium high heat sear ribs on all sides until very nicely browned.

  3. Place seared ribs into crock pot then add peas, vegetables and water.

    Cover with top and set on low temp.

  4. Let cook for 8 hours.

    Adjust seasoning with salt and pepper to taste.
