Zucchini Boats with Olives and Pine Nuts
Preheat your oven to 400 degrees F.
Cut the zucchini half-lengthwise and shape them in boats.
Take a bowl and add tomato sauce, spread 1 layer of sauce on top of each of the boat.
Top with onion, olives, tomatoes and pine nuts.
Bake for 20-25 minutes.
Sprinkle top with basil to garnish.
