I like the fact that pork loin is very easy to work with you almost can’t mess it up and because it is so easy to cook and does not take a lot of time to cook it’s often prepared as a last minute dish when unexpected guess are on the way.

This is a great piece of meat to cook it pairs well with spicy bold seasoning of the south west so, if you want a piece of meat that will leave you with good leftovers  that can be used for sandwiches and other quick entrées this Southwestern Pork Loin recipe is definitely for you.

As a matter of fact I tell people all the time if you’re going to cook pork loin cook enough to have leftovers you just might save yourself some time during the week. This particular pork loin is air fried and does not take a whole lot of time to cook.

Pork loin is usually a very reasonably priced piece of meat and that makes it great for lunch dinner or anytime and any meal. In this recipe we bring the big bold flavors of the Southwest with a little sweet and a little fire. This Southwestern blend should work well with this cut of meat.

Make it your own

You can create great southwestern flavor blends by adding more or less of what you really like. Such as, more red pepper, cumin or brown sugar you can also add ingredients that are not in the recipe such as honey or Dijon mustard.

  1. Combine all seasonings and mix until well blended. Rinse and pat dry the pork loin. Mist or rub with oil.

    Season generously with seasoning mix.

  2. Place into air fryer basket and set at 392° and cook for 16 minutes.

    Turn meat over and cook for another 10 minutes or until pork loin reaches the desired temperature.

  3. Using an instant read thermometer levels of doneness are as follows.

    Medium rare  145° - 150°

    Medium   150° - 155°

    Medium well  155° - 160°

    Well   - 160°

    Air fry 22 - 26 minutes at 392°
